MAI DOMI 2017
Mai Domi means “never tamed" in Italian and it’s a deeply expressive, passionate natural wine made from mainly Merlot grapes, Cabernet Sauvignon and a small portion of the rare Veneto Colli Euganei variety Pataresca, all farmed biodynamically. Wild fermentation takes place for 2 weeks in cement and fiberglass, followed by elevage in old wood before being bottled with no eonologic trickeries nor added SO2. Bold, assertive and focused without ever being overpowering, it shows a deeply poetic streak: spiced black mulberries with olives confit, sweet capsicum and compote or red currants and lavender.
