RISERVA GABRIO PINOT NERO 2018
The almost viking North meets the passionately fiery South when the grape that came from the cold, Pinot Noir, meets the Mediterranealy carnal flesh of Sicily’s Pantelleria. Fire and ice meet with 7 months of wild fermentation and skin contact in amphora, no fining, filtration or added SO2. Impossible yet heavenly equilibrium between charred venison guanciale, white mulberries, saffron-infused cotton candy and lightly candied capers.
