THE RAVEN
The Raven by Podere Erica is a wild-hearted Tuscan red made from Sangiovese (50%), Canaiolo (30%), and a splash of Trebbiano (20%)—yes, the white grape, because rules are boring.
Born in the Chianti hills at a tiny organic farm run by the Dempseys (they fell in love with Tuscany and never left), this wine is zero nonsense: no chemicals, no filtering, no fining, no fake stuff. Just good, clean juice.
Fermentation? Native yeasts only.
Harvest? By hand, of course.
Maceration? 4–8 days on skins with some whole bunches, just to keep things interesting.
Aging? 9 months on fine lees in stainless steel.
In the glass: juicy red berries, a whiff of herbs, zippy acidity, featherlight body, and tannins so chill they could be your yoga instructor.
Pairs well with grilled meats, funky cheeses, mushroom pasta, or just a sunset and a playlist.
Oh, and serve it slightly chilled... Because yes, it's that kind of red.
