Organic Anarchy - Sivi Pinot - 2020
Aci Urbajs’s remote farm in Ritoznoj is a sacred site for purists. Cultivated strictly according to cosmic and lunar rhythms, his steep vineyards are free from all synthetic inputs. In the cellar, Aci rejects every modern safety net: no commercial yeasts, no temperature controls, no filtration, and strictly zero added sulfites. Sivi Pinot (Pinot Grigio) holds a special place in his lineup, its pink skins allow Aci to construct deeply amber, structurally hypnotic wines without losing an ounce of mountain freshness.
At a sweet-spot 12% ABV, the 2020 Sivi Pinot captures a pristine balance between the grape's natural richness and the crisp, cool-climate energy of Styria. Extended skin contact extracts the full spectrum of copper-pink pigments, resulting in a mesmerizing orange-amber profile.
The Visual: A glowing, hazy coppery-rose amber with bright salmon reflections. Unfined and unfiltered, holding the soft, natural cloudiness of a truly raw elixir.
The Nose: Aromatic, complex, and earthy. Opens with dried nectarines, blood orange rind, and sour wild strawberries, layered over notes of pink peppercorns, dried marigolds, crushed slate, and a hint of raw beeswax.
The Palate: Deeply textural yet beautifully agile. The pink-skin maceration provides a fine, tea-like tannic grip that frames flavors of salt-cured citrus, dried apricot, and savory botanicals. A vibrant, mouthwatering vein of mountain acidity cuts through the mouthfeel, driving a long, bone-dry, saline finish.
Sivi Pinot under Aci's touch is light-years away from industrial Pinot Grigio, it is an authentic, ancestral orange wine with real soul. The 2020 bottling captures the grape at its most balanced: offering the phenolic chew and complexity of skin contact alongside an effortless, 12% alcohol drinkability that keeps the bottle moving fast.
Best enjoyed: Cellar temperature (12–14°C / 54–57°F). Avoid over-chilling to let its delicate copper tannins and wild, savory aromatics fully stretch out.
