Perched on the steep slopes of Mount Rifnik, Aci Urbajs produces some of Central Europe’s most revered, unadulterated cuvées. A former aerospace engineer turned wine artisan, Urbajs approaches winemaking with absolute devotion to nature's raw instincts, cultivating just one hectare of land under strict biodynamic principles. In both vineyard and cellar, his methodology is uncompromising. Working without synthetic chemicals, he relies on spontaneous native-yeast fermentations, extended skin contact, and patient aging in traditional oak casks. Every bottle is hand-filled without filtration, fining, or added sulfites. Yields remain exceptionally rare often capped at fewer than 2,000 bottles annually. Built primarily around field-blended white and red varieties, these amber and light red expressions reveal an electric minerality, herbal complexity, and living energy that evolve endlessly in the glass.
