XAREL-LO 2011
This astounding white natural wine from permaculture master Ton Rimbau is 100% Xarel-lo from a blend of almost 50 years old vines and slightly younger ones, harvested in surmaturation so as to intensify its richness. Like all of Ton’s wines this is spontaneously fermented in steel and aged in barrique. It isees no degrading fining, filtration or added SO2, and, once bottled in porcelain, is further aged in large underwater “non-negative geological tubs”. It is a wine of fiery personality and resonant depth: burnt clementine with rosemary and incense, petrol-like minerality, shimmering umami, lemon curd and dried ginger.
