XAREL-LO SUR LIE 2011
This magical juggernaut of a Spanish natural wine from Catalunya’s biodynamics and permaculture genius Ton Rimbau is a memorable epic tale of emotional depth and complexity. 100% Xarel-lo from two old parcels, one planted in 1973 and the other in 1984, that have never been worked in 6 years. It’s spontaneously fermented in steel and aged in barrique on its lees for 9 months, after which it’s bottled in porcelain with no fining, filtration or added SO2, and aged large underwater “non-negative geological tubs”. Ripe lychee with fresh tarragon, eucalyptus honey, baked Morgana apple with nutmeg and allspice.
