Ismael’s Brutal, a now notoriously rare line of wines part of the cooperation with other vignerons, is like all of his wines 100% Verdejo from very old vines at high altitude. Every year it’s different but always characterised by a defiant note that makes it unforgettable. It macerates for 7-8 months in amphorae before and during spontaneous fermentation. It’s bottled with no fining, filtration or added SO2 and rests there a further 4-6 months. Wildly assertive and deeply complex with bruised Fuji apple, fried sage, smoked quince and red curry with sweet incense.
