This crazy, bewildering and just absolutely beautiful beast of a Spanish natural wine comes from a blend of all of Ismael’s fermenting musts, that is to say all of the wines made in that vintage from Verdejo, all organically grown and many from centenary pre-phylloxera vines. During spontaneous fermentation in steel lees of all the different wines are added to enrich the wine and increase its power and density, resulting in a beautifully turbid elixir often with hints of fine and controlled oxidation. No degrading fining, filtration or added SO2 to be found here. Definitely not an easy wine but a sensory and spiritual experience like few others: spicy kombucha with cardamom and lime juice, spectral minerality and shining acidity, rye bread with dried ginger, fresh starfruit and white pepper.
