DI NT E DI 2016
Di nt e Di is Panevino’s daily wine, crunchily joyous and eminently drinkable, and manages at the same time to be an astoundingly complex orange wine, a true work of art like each and every natural wine from Gianfranco. It’s a blend of local varieties Trebbiano (very rare but present in Sardinia), Vernaccia and Nuragus, blended with the first-pressed juice from his older orange brother wine Alvas. The grapes ferment spontaneously in contact with the skins for a length of time of a few days or a week (Gianfranco doesn’t actually remember). There is no degrading oenological trickery, fining, filtration or added SO2 to be found here, just an amber-hued fireball of an incredibly living wine. Saffron tea with prickly pear compote, braised persimmons, balsamic herbs and smoked hay.
