This is electrically and deeply characterful juice is Ismael’s daily wine, coming from a blend of younger and old Verdejo vines, organically farmed at high elevation in Nieva on silica-sandy soils. The grapes are pressed in whole bunches and wildly fermented with no temperature control or any additives; the wine goes in the bottle with no degrading fining, filtration or added SO2. This is a wine of luminous joy and fresh conviviality: cedar citrus juice with a touch of flinty minerality, lemongrass tea and cloves honey.
