This baroquely opulent, intimately territorial and supremely focused and drinkable natural Sauvignon comes from the very heart of Sancerre yet goes against the grain of contemporary, pale and rather castrated Sancerre Sauvignons in a thousand different ways. The name, a homage to Sebastien’s wife, means “rock” in Lithuanian and points to the white limestone-based soils typical of this terroir. This is a natural wine for the ages: 100% Sauvignon from a single cru of 50 years of age worked according to strict biodynamics, the grapes ferment naturally in steel and see short skin contact before elevage of 36 months in used barriques. It goes to rest in the bottle with no trace of fining, filtration or added SO2. Supremely deep, majestic and lush without losing tension and vibrancy: grilled red figs with turmeric, hibiscus honey and smoked hay dance in unison with Calvados-infused apricot, thyme and rhubarb.
