LA FENICE 2016
La Fenice, meaning “Phoenix” in Italian is a sharply and delightfully fresh and electrifying natural red born out of 100% Sangiovese farmed biodynamically in the very heart of Chianti. The grapes ferment with carbonic maceration, meaning that they are not crushed but begin to ferment “from the inside out” in absence of oxygen. This technique results in a wine that is blindingly bright, fresh and exploding with terse and spicy fruit. It pirouettes and soars with fresh bilberries, balsamic verses, pickled cherry blossom and pomegranate juice with green peppercorn.
