Ut Bibendum celebrates Roberto and Lucia’s love for their terroir and the Tuscan tradition, it’s the perfect antithesis to “parkerized” Chianti, blending all of the most traditional Chianti blend grapes except Sangiovese. It’s a blend of biodynamically farmed Canaiolo, Malvasia nera, Foglia Tonda and Pugnitello from 50 years old vines. After a pre-fermentative maceration of 2 days it ferments spontaneously for 20 days and undergoes elevage in wood and steel with no added SO2. Expressive depth and shining personality with winter mulberries, allspice, red flowers and balsamic notes.
