LES FLEUR SAUVAGES
This is Jerome’s 100% Viognier, hailing from old vines in the Ardeche’s Vallee d’Ibie, which have always been farmed naturally and are now certified organic. The cooler climate and elevation, coupled with the typical clay-limestone soils, combine to imbue this delightful natural wine with a fruity expressiveness and remarkable depth. After spontaneous fermentation the wine ages in large wood for 18-20 months before being bottled with no fining, filtration or added SO2. Bright acidity and profound and enveloping mouthfeel: white peach with jasmine, lime zest and browned chestnut butter.
