YAVOL

 

Yavol is a thrilling example of the heights of complexity a light Jura natural red wine can achieve, while being at the same time blessed by an unbelievable drinkability and gastronomic quality. Usually this is a blend of all of the allowed Jura grapes red and white grapes, Pinot Noir, Chardonnay, Poulsard, Trousseau and Savagnin, from an old and venerable 70 years old vineyard where they are co-planted together, as it has always been customary everywhere in France. The grapes were co-fermented with their wild yeasts and saw a skin contact of about 6 weeks before elevage in old barrels. The 2017 is 100% Pinot Noir. This is an exquisitely vibrant and living wine, shining with exciting texture and flavor: arctic red berries and white currants with forest floor, thyme and tamarind.
