Baffo, meaning “moustache” in Italian and referring to the old wise farmer/winemaker supporting the Sete Boys, is a red natural wine obtained from a blend of Ciliegiolo and local and rare varieties Bonamico and Nero Buono. The naturally grown grapes see a brief skin contact during wild fermentation except for Nero Buono, which macerates for 5 days, all in fiberglass. Dense, juicy and free-spirited: tart black cherries, sour plums and crushed hibiscus petals, pomegranate and dark orange rinds.
