CHAMPAGNE PAPILLON
Hailing from the tiny parcel “La Fosse”, characterised by limestone and in prevalence red clay soils” this sanguine and austerely passionate champagne is made from 100% Pinot Noir. It of course sees natural fermentation, after which it spends 9 months of elevage in wood of differing sizes and 18-20 in the bottle on its lees, and no fining or filtration. Creamy yet pleasantly sharp bubbles pave the way for blood orange with wild red basil, mineral echos and crunchy forest berries. Like all the wines from this precious biodynamic maison, this Champagne is a brut nature (no dosage added to initiate the second fermentation) and has no added SO2.
