DROPS OF HISTORY ... it's the year 1046 A.D. Matilde of Canossa was born. The father Bonifacio, Marquis of Tuscany, gives the Emperor Henry III of Germany on a visit to Canossa a silver barrel containing the vinegar that he had heard become perfect there (cf. Vita Mathildis, Doninzone). Fruit of a prolonged aging, over 25 years, of the must cooked in oak, cherry, ash, mulberry and chestnut barrels.

The sugar and acetic fermentation processes give rise to optimal maturity, ageing and refining after a time period of not less than 12 years, wich is the minimum period of time that must elapse before placing the DOP product on the market. It is forbidden to make any reference to the year of production of the "Aceto Balsamico Tradizionale di Reggio Emilia", or to the presumed age of the product or the founding date of the vinegar production plant; however, the term "extra vecchio" may be used for a product wich has been aged for no less than 25 years and with chemical and sensory properties that comply with the specifications listed in the inside brochure.
