ALIGOTE
A true natural Bourgogne gem, this natural Aligotè comes from the Lieu-dit Les Genouvrees, characterised by white clay, limestone and fossils. The grapes, born from biodynamically farmed 30 years old vines, ferment naturally with their own native yeasts once they’re direct-pressed and see then 15-80 months of elevage 30% in steel and 70% in large barrels. Focus, tight yet relaxed and delightful, it shines with beeswax, golden apples with saffron reduction, acacia and wild flowers.
