The terroir of Roussillon’ Trouillas is here incarnated and distilled in this enchantingly otherworldly natural red from revered vigneron Alain Castex. It’s a blend of Mourvèdre, Carignan and Grenache Gris et Noir, with a drop of Syrah and Macabeu, from centenary vines on clay, gravel and schist soils, all of course biodynamically farmed. Wild and untamed fermentation, semi-carbonic maceration to provide crunchy lift and of course no debasing fining, filtration or added SO2. It soars and slices with Armagnac-soaked black cherries, forest floor and cooked grape must, cinnamon, caramelised pomegranate and green peppercorns.
