BOURGOGNE ALIGOTE
A deeply territorial and infinitely delightful natural wine from Bourgogne natural wine masters Alice and Olivier De Moor, it comes from the ugly duckling grape of this denomination, which can however give birth to real masterpieces if handled with love and wisdom. Coming from organically grown vines on rocky limestone soil, it ferments partially in wood and partially in fiberglass, aging then in fiberglass for a few months. Freshness and a multi-layered depth of character reign here: lightly charred pomelo with peppermint and lemongrass, almond oil and basil butter.
