Aldo’s “daily wine” is a luminously undeniable freshly pressed juice of Sicily. It’s a selection of Catarratto, Grillo, Grecanico from 3 different cru’s near Alcamo farmed only with natural methods, fermented separately with their wild yeasts and with 3 weeks of skin contact for Grillo, then blended and aged in steel before being bottled unfined, unfiltered and with no added SO2. Solar, dynamic and wildly kaleidoscopic, it sings with fresh yellow plums, rosemary, lemongrass and smoked pine nuts with cloves honey.
