CHAMPAGNE LES SEMBLABLES 2016
This 100% Pinot Noir Blanc de Noirs natural Champagne from the tiny hamlet of Buxières-sur-Arce in the Côte Des Bar is born out of the collaboration of natural Champagne star Bertrand Gautherot of Vouette & Sorbée and his friend and long time partner, the young Benoit Doussot. Certified organics in the vineyard, it sees only manual work, wild fermentations and nothing added or taken away. It sees an elevage in neutral oak before the second fermentation and at least 15 months in the bottle sur latte. Terse sapidity, carnal fruit and unending depth are here dominant: compote of white mulberry, sage and saffron with chestnut butter and maracuja.
