ROSE DI CASPRI
Rosé di Caspri is the "salasso" taking the must at the beginning of the red winemaking process of Sangiovese, macerated with the skin for few hours. This "Rosato" born in the hilly area close to Arezzo, and is expression of a clay and gneiss soils, dry and sharp. Fermentation in steel without temperature control with indigenous yeasts. No filtrations, no added sulphites and no clarifications. Pleasantly acid, pretty dry, with notes of peony.
