CHAMPAGNE SAIGNEE DE SORBEE 2015
This biodynamic pearl of a Champagne, one of the most striking by artist-vigneron Bertrand Gautherot, is born near the village of Buxières-sur-Arce in the heart of the Côte des Bar from 100% Pinot Noir grapes on mostly clay-limestone soils. Made with the “saignee” method, which entails pulling (bleeding) part of the juice from a tank of fermenting red must. Wild natural fermentation is followed by the Method Champenois traditional second fermentation and by a long and patient elevage on its lees in wood and the bottle. The saignee method infuses with added prowess and fine complexity: dried pomegranate sherbet with thyme and wild mint sing in unison with hibiscus tea, fresh apple berries and spiced rye bread.
