CHIAROFIORE
This astoundingly expressive Tuscan orange wine hails from over 40 years old vines of Trebbiano 85% and Vermentino 15%. The varieties ferment wildly in separate masses in steel, with the Vermentino seeing a skin contact of 2 weeks and the Trebbiano being harvested in 3 different phases, with varying degrees of maceration. The latest Trebbiano harvest sess the grape in surmaturation and attacked by “noble rot”. Remarkably age-worthy, it shines with multi-layered complexity and unforgettable depth: ripe mango with dried fennel, caramelised cashews with allspice, pickled peaches and incense.
