Coming from 80% Xarel-lo grapes planted in 1984 and 20% Macabeu planted in 1988, this explosively vital and evocative petnat from Catalunya is a sight to behold. Vineyards are tended according to the permaculture method, which goes beyond biodynamics, and does not work the vines except for the regulation to be found in natural organisms. Like all of Ton’s wines this is spontaneously fermented in steel and aged in barrique. The second fermentation is kick-started by adding sweet wine and must. It is of course not subjected to degrading fining, filtration or added SO2, but, once bottled in porcelain, is further aged in large underwater “non-negative geological tubs”. It sings with cloves honey, green papaya, quartz and saffron.
