FOGLIA TONDA 2018
Foglia Tonda (meaning “round leaf” in Italian) is another ancient local Tuscan variety, dating back to the early Renaissance, saved and brought back to new life by Roberto of Podere Casaccia. It comes from old vines lovingly cultivated according to biodynamic principles, it ferments spontaneously for 20 days after a pre-fermentative maceration of 2 days, then ages in wood and steel with no added SO2. Intense and of unforgettable personality: marasca cherries, pickled capers, spring flowers and willow essence.
