RUFIAN RUFETE 2015
This intensely elegant and complex natural Spanish red is born from the rare variety Rufete, apparently a distant relative of Pinot Noir, from an organically farmed parcel planted in 1951 on soils of slate and decomposed granite. It ferments spontaneously and is bottled with no fining, filtration or added SO2 after an elevage of 10-12 months in Burgundian barrels. Subtle and suave yet possessed of a wild streak: balsamic herbs, forest floor, macerated violet petals and wild strawberries.
