We stand here before a true natural Bourgogne treasure, a 100% Pinot Noir from 60-65 years old vines from the lieu-dit of les Caillettes which, quite unusually for the Hautes Côtes de Beaune, is red soil with hardly any rocks. Vinified with natural wild fermentation in whole bunches and aged in large barrels, it is bottled with no fining, filtration or added SO2. This light-coloured stunner dances around a fragrant core of red forest berries, bramble, humus and spiced pomegranate juice.
