RIPAZZO BIANCO 2018
The wine’s name is a play on words that mixes the “ripasso” technique with “pazzo” (crazy), pointing to the quirky character of this uniquely delicious wine. In its first vintage it was born out of a wine which couldn’t finish to ferment properly and was re-ignited by the skins of the new vintage. The magic recipe here is Litrozzo Bianco 2018 (Procanico, Malvasia, Roscetto, Verdello, Petino and Romanesco) with a mad “ripasso” on the skins of the Litrozzo Bianco 2019 (maybe the same grapes?). Roaringly and authentically rustic yet hyper-focused and blessed with otherworldly drinkability: grilled Lebanese citrus peel with smoked barley, fresh peppermint and yellow kiwi.
