Lammidia’s Bianco Carbo, as the name suggests, is their blissfully original and straight delicious interpretation of a carbonic maceration orange wine. It’s a blend of the typical Abruzzo grapes Trebbiano, Passerina and Cococciola in carbonic maceration in whole bunches, sealed in cement tanks in absence of oxygen. This allows fermentation to begin within the grape itself, emphasizing fruity and floral aromas. With none of the overly sweet tones often associated with this technique, this is laser-like focused juice torpedo: crushed honeysuckle, yellow plums with saffron powder, chamomile and Lebanese kaffir peel. No added SO2 of course!
