Dry white wine aged 7 years under a veil of yeasts.Undoubtedly the most precious gem among the Domaine’s stunning natural wines and the most traditionally representative of Jura’s terroir and heritage, this is 100% Savagnin from venerable old vines near the town of Arbois. Vineyards have been always naturally farmed since immemorial time and certified organic since 2010. The whole bunches are pressed and fermented spontaneously in steel, after which they rest in untopped large barrels for 7 years of elevage under the typical “flor” veil of yeasts that interact with oxygen. Bottled with no fining, filtration or added SO2, this is a wine of epic prowess and almost epic majesty. Sweet Moroccan spices, turmeric and chestnut honey battle then dance with dried apricot, dates and rum-soaked caramelised pecans.
