TERRE DE GRYPHEES
This is a stunningly elegant yet resoundingly structured and energetic natural Chardonnay from one of Jura’s most legendary domains. It’s 100% Chardonnay grown organically near Arbois, with the vines resting on Jurassic clay and marlstone soils. Spontaneous fermentation begins after direct-press in steel tanks and continues in old large barrels, after which the wine sees no less than 2 years of elevage on the fine lees before bottling with no added SO2 according to Maria Thun’s biodynamic calendar. Tersely mineral and imbued with an abysally deep complexity: acacia blossoms with quartz and lemongrass elixir, white plums flambè and spiced tamarind peel.
