BOURGOGNE BLANC 2016
This natural wine Bourgogne treasure is 100% Chardonnay from a small parcel near the village of Saint Aubin. The venerable elder vines were planted in the 1960’s and draw depth and complexity from the typical white, gravelly soil rich in clay marlstone. Work in the vineyard is strictly biodynamic, while the grapes are spontaneously fermented and the wine then aged in large barrels for at least 15 months on the lees, before being bottled with no fining, filtration or added SO2. Purity, light and minerality rule: citrusy notes, elderflower, basil and lavender.
