MARSANNAY BLANC 2017
This heart-rendingly majestic yet delicately sincere white natural wine from Bourgogne rising star Sylvain Pataille is a resounding love song to Chardonnay and the terroir of Marsannay. It comes from old vines farmed naturally just at the beginning of the Côte d’Or, a terroir characterised by rocky clay-limestone soils and a winemaking history of more than 400 years. Fermentation takes place spontaneously with the grapes’ native yeasts in fiberglass, followed by 2 years’ elevage in old barriques and bottling with no fining or filtration. Opulence is only suggested here but its substance and soul are alive with tension and energy: mimosa blossom with pineapple flambè, saffron and demerara sugar crystals, bruised apples and candied ginger.
