This super-sapid, crazy mineral and wonderfully juicy natural orange wine from Lazio is another remarkable feat by the Sete boys. It’s 60% Ottonese, an almost forgotten local grape, and 40% Malvasia puntinata, wildly fermented and with 48 hours of skin contact, which then ages 6 months on the fine lees in fiberglass. Lemon pith, smoked hay, yellow kiwi, honey-roasted cashews and fine white pepper.
