LES GRANDVAUX 2017
Again an heartrendingly beautiful Savagnin from Jura’s rising star Celine Gormally, who honed her natural wine craft under the legend Labet. This comes from relatively (in this context) younger vines of 40 years old farmed organically and biodynamically near the tiny village of Passelas. Wild fermentation, no fining or filtration and 18 months of elevage in neutral oak. Dried mango and wild herbs, crushed honeysuckle and chamomile petals, pomelo rind.
