VOICI DES AILES PET NAT ROSE’
This delightful light crimson bubbly from Auvergne’s Vincent and Marie Tricot is nothing less than a natural wine missile. It’s a pet nat from 100% Pinot Noir grapes from old vines, grown biodynamically, vinified super-naturally and re-fermented in the bottle with the “ancestrale method”, that is bottled (with no added SO2) with residual sugar so that fermentation will “fall asleep” with the Winter’s cold and restart in the spring creating the bubbles. Lightenss of touch, elegance and vibrant energy: rosehip with cinnamon and wild tarragon, goji berries, spices and rhubarb.
