ROSSO CARBO 2017
Borrowing the technique typical of Beaujolais Lammidia gives light to this natural red wine from 100% Montepulciano that is a supernova of blinding and juicy freshness. The grapes undergo carbonic maceration in whole bunches for about 2 weeks, with the fermentative process starting within the whole grape rather than the crushed must, then they’re destemmed and crushed, spending 12-24 hours on the skins, and finally pressed before heading to the amphora for elevage. Fresh cassis with bilberry essence, brown Demerara sugar-covered black cherries, crushed lily petals. No trace of added SO2 of course!
