Gaia is in our opinion one of the few true masterpieces of Fiano, one of Campania’s most famed and ancient local grapes, widely known for its aging potential. This veritable alpha and omega of Fiano comes from a cru of ancient and unbelievably wise vines, some over 100 years old, saved from oblivion by Daniela and Antonio and growing at altitude on clay-limestone soils. Wild fermentation is slow and can last up to 3 months, with usually 4 days on the skins, in acacia, chestnut and large oak barrels. Elevage in the same containers lasts usually 6-12 months. Graced with vertiginous verticality, poetic depths and electrical freshness, it roars with lemon confit, dried persimmons and ash-preserved jackfruit, mediterranen herbs with charred quince.
