This authentic natural Champenoise masterpiece comes from a vineyard of Spergola planted in 1970, treated only with natural extracts and rich with wildflowers and biodiversity, and generating fruit of incredible concentration and spirit. It undergoes a brief maceration on the skins and rests 36-48 months on the lees before degorgement. Rich, brightly mineral and incredibly complex with notes of dried ginger, sourdough brioche, toasted almonds, ripe guava and fried sage.
