ROSSO SAIGNÉE 2017
Aldo’s Rosso Saignée can actually be considered a super-charged rosé or a lighter red, as it’s produced with the “saignee” method. This refers to “bleeding off” a portion of the red juice after a length of skin contact. Regardless, it’s a pink-crimson supernova of unparalleled focus and character. It comes from super-organically farmed vines of Nerello Mascalese, Perricone, Syrah, which ferment with their native yeasts and age in steel, then the wine is bottled with no added SO2, fining or filtering. A bit lascivious, spicy and electrically juicy, the perfect antidote to pale, sad conventional rosès: wild forest strawberries with red spices and fried sage, chinotto and pink grapefruit rind.
